Sugar Beach event menus feature Costa Rican cuisine using local recipes. Naturally, fish plays a key role as mahi mahi is caught off the shores of Costa Rica, and tilapia is farmed in Guanacaste. Sauces we prepare typically compliment both fish and chicken. Our suggested menu for a taste of the tropics includes dishes that incorporate indigenous fruits. Cooking with tropical fruit adds sweetness and a festive flair to the table.
Pollo Maracuya, or chicken with passion fruit sauce, uses a house-made sauce with a complex, sweet and sour flavor. Served with fresh, mixed vegetables, it turns a juicy chicken breast into a sensory delight.
As with coffee, bananas, and pineapple, heart of palm and pejibaye are widely cultivated in Costa Rica. A salad with fresh seasonal palmito and pejibaye is a perfect intro to all main courses.
Although the chimichuri is a recipe borrowed from South America, ours uses herbs fresh from our organic garden.
Consider sweet plantains or a tropical pilaf using coconut and quinoa for sides, replacements for potatoes or rice.
Kick off any celebration on the beach at sunset with bocas – Costa Rican “little bites” served with drinks – and a signature cocktail made with gauro or rum!
